Reporting to the Chef of the Company, this position is responsible
for the tasks that focus on the day-to-day activities in the
kitchen. Responsibilities include but are not limited to: leading
the cooks in their duties, food production, waste control, menu
costing, ordering of stock, inventories and scheduling.
--- Oversee daily operations and daily assignments
--- Train and coach, a successful culinary team and ensure cooks
are cross-trained to support successful daily operations
--- Complete scheduled inventories, stock and requisition necessary
supplies supporting procedure for portion and waste control
--- Ensure compliance with all health regulations and to train
cooks in proper handling and temperature controls
--- Develop and maintain a cleaning schedule to ensure work areas
are clean and sanitary
--- Report malfunctions with equipment
--- Effectively address guest concerns
--- Provide constructive feedback to cook to help them develop
--- Other duties as assigned
